Whole Wheat Caprese Panini

This classic panini is simple to make, perfect for breakfast or lunch. This sandwich pairs well with healthy vegetable chips (such as kale chips).

2 slices of whole wheat bread

2 tomato slices

1 slice (1 oz.) of low-fat mozzarella cheese

4 basil leaves

cooking spray to coat the skillet or panini grill


1Preheat the panini grill or heat a skillet over medium heat.

2In the meantime, place 1 bread slice on a work surface. Arrange basil leaves, tomato slices, and mozzarella cheese on the bread. Cover with the remaining bread slice.

3Lightly coat the panini grill or skillet with cooking spray before placing the sandwich.

4Cook for 2 minutes on each side of the sandwich or until golden brown and the cheese is melted. Cut panini in half.
