Spaghetti Squash

August 26, 2015

Perfect substitute to the ordinary wheat spaghetti or macaroni. Spaghetti squash is low in calories, carbs and sugars. Makes a great addition as a side dish.

  • Prep: 5 mins
  • Cook: 40 mins
  • Yields: 6 Servings

1 medium spaghetti or orangetti squash (about 2-3 pounds)

1Preheat the oven to 400 F.

2Slice the squash in half lengthwise from the stem to the tail. Remove any seeds.

3Place the squash on a baking sheet, cut-side down. Cover loosely with aluminum to minimize over roasting.

4Cook for 35 - 40 minutes or until the squash flesh is tender and separate easily.

5Scrape off the squash with a fork. Gently pull the flesh from the skin and separate into strands to resembles spaghetti.

6Serve immediately.
