Slow Cook Chicken Stew

Slow cooked chicken stew ready in four and a half hours. Potatoes are optional for this recipe.

  • Yields: 6 Servings


2 medium potatoes, peeled and cut into chunks (optional)

1 cup of frozen corn, thawed

1 cup of carrots, cut into chunks

¾ cup of celery, chopped

1 medium onion, sliced

2 cloves of garlic, chopped

1 cup of tomatoes, diced

1 ½ tsp of ground cumin

1 tsp of chili powder

½ tsp of ground pepper

1 lb of boneless chicken breasts, cubed

2 ½ of cups chicken broth

Fresh cilantro, chopped (optional) as garnish


1Spray 4 - to 5 -quart slow cooker with cooking spray.

2In slow cooker, mix potatoes, corn, carrots, celery, onion and garlic. Stir in tomatoes, cumin, chili powder and pepper. Place chicken on top of vegetable mixture. Pour broth over ingredients. Cover and cook on High heat setting 4 hours.

3Garnish with cilantro if desired.
