A simple sautéed shrimp and tomatoes seasoned with garlic, herbs, and a light vinaigrette. You can substitute small shrimp with a larger variety. If so, chop large shrimp into smaller bite size.
1In a medium skillet, add a tablespoon of olive oil.
2Sauté garlic, oregano, parsley and shrimp over medium heat.
3Cook shrimp for 3-5 minutes or until all shrimp turn pinkish and opaque.
4Add cherry tomatoes and wine vinegar. Cook for 1 minute.
5Season with salt, pepper, and chili flakes. Mix well.
6In a small bowl, sprinkle low-fat feta cheese over tomatoes and shrimp mixture.
