1 tbsp. of olive oil
1 clove of garlic, minced
¼ lb. of small shrimp, cleaned, peeled, and deveined
1½-2 cups of cherry tomatoes
2 tbsp. of low-fat feta cheese, crumbled
½ tsp. of dried oregano
¼ tsp. of dried or freshly chopped parsley
1 tbsp. red or white wine vinegar
Salt, pepper, and chili flakes to taste
In a medium skillet, add a tablespoon of olive oil.
Sauté garlic, oregano, parsley and shrimp over medium heat.
Cook shrimp for 3-5 minutes or until all shrimp turn pinkish and opaque.
Add cherry tomatoes and wine vinegar. Cook for 1 minute.
Season with salt, pepper, and chili flakes. Mix well.
In a small bowl, sprinkle low-fat feta cheese over tomatoes and shrimp mixture.
