It is best to use a sushi grade tuna loin for this recipe. To make more well-done in the center, place pan-seared tuna in an oven at 375F for 3-5 minutes.
6 oz. of Ahi Tuna loin, at least 1-inch thick
3 tbsp. of white sesame seeds
1 tbsp. of black sesame seeds
¼ tsp. of kosher salt
1/8 tsp. of ground black pepper
1 tbsp. of olive oil or a cooking spray to coat the skillet
1In a small bowl, combine white sesame, black sesame, salt, and pepper together. Transfer the mixture to a plate.
2Place and coat the tuna on top of sesame mixture. Cover tuna evenly with sesame seeds until all sides of the tuna are covered.
3Coat a nonstick skillet with olive oil or cooking spray. Heat the skillet over medium heat.
4When the skillet is hot, place sesame-coated tuna and sear for 30-60 seconds on each side.
5Transfer and rest the seared tuna on a cutting board for 1 minute.
6Cut tuna into ¼-inch thick slices.
