The traditional tabbouleh (or also known as tabouli) salad is commonly using bulgur as one of the main components. However this recipe is using quinoa because quinoa is more commonly available in stores and contain good amount of protein. This recipe is using pre-cooked quinoa for faster results. Leftover can be kept in the refrigerator for the next couple days.

2 cupsof pre-cooked quinoa, chilled or at room temperature
1 medium cucumber, diced
1 medium tomato, diced
1/2 medium red onion, diced
1/4 cupof freshly chopped mint leaves
1/2 cupof freshly chopped flat-leaves parsley
1 small garlic clove, minced
1 tbspof lemon juice
1 tbspof extra-virgin olive oil
pinch of Salt and pepper or to taste
1In a large bowl, mix all ingredients. Season with salt and pepper to taste.
