1 medium cucumber, diced
1 medium tomato, diced
1/2 medium red onion, diced
1/4 cup of freshly chopped mint leaves
1/2 cup of freshly chopped flat-leaves parsley
1 small garlic clove, minced
1 tbsp of lemon juice
1 tbsp of extra-virgin olive oil
pinch of Salt and pepper or to taste
