Poached Pears

A non-alcoholic version of poached pears, sweetened with stevia. For darker/reddish color, you may substitute white grape juice with no sugar added red grape juice.

Yields: 4 Servings

Ingredients

4 small ripe pears (firm varieties such as Anjou or Bartlett), peeled, cored, stem intact 2 cups of no sugar added white grape juice 1 cup of water 2 teaspoons of stevia 1 tsp. of vanilla extract (optional) 1 medium lemon, sliced 1/8 tsp. of kosher salt 1 cinnamon stick

Directions

--- To Make Poached Pears --- Combine all ingredients, except pears, in a medium pot. Bring to simmer. Add pears, and bring to boil. Lower the heat, cover the pot with a lid, and simmer for 30 minutes or until the pears are tender. Turn off the heat. Let the pears submerge in the liquid for about 15 minutes. Remove pears from the sauce, and set aside. --- To Make Grape Syrup Reduction --- Discard lemon and cinnamon stick. Over medium heat, bring the remaining liquid in the pot to boil. Lower the heat and simmer for 15 minutes to thicken the consistency. Serve poached pears with few tablespoons of reduced syrup. Enjoy warm or chilled.
