Preheat the oven to 375F.
In a large bowl, toss carrots with oregano, kosher salt, pepper, parsley, olive oil and honey.
Spread carrots evenly on a large parchment-lined baking sheet.
Cover loosely with foil. Bake carrots for 45 minutes or until the carrots are tender.
Remove the foil, and continue baking for 10 minutes.
Season with salt and pepper to taste.
