A simple vegetable dish that is perfect as a side dish or healthy snacks. Sprinkles freshly chopped parsley before serving, if desired.
1Preheat the oven to 375F.
2In a large bowl, toss carrots with oregano, kosher salt, pepper, parsley, olive oil and honey.
3Spread carrots evenly on a large parchment-lined baking sheet.
4Cover loosely with foil. Bake carrots for 45 minutes or until the carrots are tender.
5Remove the foil, and continue baking for 10 minutes.
6Season with salt and pepper to taste.
