Miso Salmon

Salmon fillet seasoned with miso paste. Miso paste is Japanese soy beans paste that has been fermented for a certain period to get the umami (savory) flavor. Marinate salmon for at least half an hour or overnight in a refrigerator.

Ingredients

4 ( 3 oz. ) Salmon fillet Cooking Spray to coat the griddle -- Miso & Ginger Sauce 2 tbsp. of rice vinegar 3 tbsp. of white or red miso paste ¼ cup of mirin (Japanese cooking rice wine) 3 tbsp. of low-sodium soy sauce 1 tbsp. of sesame oil 1 inch of fresh ginger roots, minced ¼ tsp. of ground black pepper 1 tsp. of honey (optional) **Combine all ingredients, mix well, and set aside.

Directions

In a bowl, marinade salmon with miso sauce. Marinade for at least 30 minutes or overnight in a refrigerator. Preheat the grill/griddle pan. Coat lightly the griddle with cooking spray before cooking the salmon. Place marinated salmon on top of the griddle and cook for 3-5 minutes on each side or until fully cooked. Serve salmon with cooked spinach and lemon slices, if desired.
