Mango Arugula Salad

Tropical fruits and vegetables salad with a sprinkle of Gorgonzola cheese.

Ingredients

1½ cups of arugula leaves ½ ripe mango, peeled and cut into long slices 1 ripe kiwi, peeled and chopped 1 tbsp of Gorgonzola cheese, crumbled --For the orange vinaigrette 1 tbsp of white wine vinegar 2 tbsp of orange juice 1 tbsp of lime juice 1 tsp of olive oil ½ tsp of cumin, ground ¼ tsp of chili flakes Salt and pepper to taste --**Directions: Combine everything together; mix well. Set aside. --For the pickled onion (optional) ½ red onion, finely sliced 1 tbsp of lime juice 2 tbsp of sugar 1 tsp of kosher salt Just enough vinegar to submerge the red onion --**Directions: Combine everything together in a shallow dish. Let it rest for few hours or until the red onions become soft and absorb the flavor. Can be made a day before. Store in a mason jar and keep in the refrigerator.

Directions

Toss the arugula, kiwis, and mangoes with 4-5 tablespoons of orange vinaigrette. Sprinkle the Gorgonzola cheese and pickled onion on top of the salad. You can add more vinaigrette to your liking. Seasons with salt and pepper to taste.
