Tropical fruits and vegetables salad with a sprinkle of Gorgonzola cheese.
For the orange vinaigrette
**Directions: Combine everything together; mix well. Set aside.
For the pickled onion (optional)
**Directions: Combine everything together in a shallow dish. Let it rest for few hours or until the red onions become soft and absorb the flavor. Can be made a day before. Store in a mason jar and keep in the refrigerator.
1Toss the arugula, kiwis, and mangoes with 4-5 tablespoons of orange vinaigrette.
2Sprinkle the Gorgonzola cheese and pickled onion on top of the salad. You can add more vinaigrette to your liking. Seasons with salt and pepper to taste.
