Italian Meatloaf

Family sized sirloin meatloaf with delicious glaze. This recipe comes with two different variations of glaze/sauce. For an easier recipe, you may use store bought low sugar marinara sauce.

Ingredients

For the meatloaf 2 tbsp of olive oil 1 medium onion, diced 3 cloves of garlic, minced 1 large red pepper, diced 1 lb of ground sirloin ¼ cup of oatmeal 1/3 cup of bread crumbs or panko bread ¾ cup grated hard cheese such as Parmigiano Reggiano 2 eggs 1 tbsp of Worcestershire sauce 1 tbsp of balsamic vinegar 2 tbsp of fresh basil leaves, chopped 1 tbsp of fresh parsley leaves, chopped For the glaze sauce ½ cup marinara sauce or made from scratch version 1/2 cup of ketchup 1 tsp of ground cumin ¼ tsp of Worcestershire sauce ¼ tsp of hot sauce/ Tabasco 1 tbsp of honey

Directions

To make Meatloaf: Preheat oven to 350 degrees. In a medium sized pan, sauté onion, pepper and garlic with olive oil over medium heat. Cook until the vegetables are soft. Remove from heat. Let it cool for few minutes. Add the remaining ingredients and combine. Shape the mixture into a loaf on a pre-oiled or parchment paper-lined baking sheet. Bake for 45 - 55 minutes or until the inner temperature reaches 155 degrees. Spread the marinara sauce or homemade glaze sauce on top of the meatloaf. Place back in the oven to for 10 minutes. Allow the fully cooked meatloaf to rest for about 5 minutes. To make Homemade Glaze: Combine cumin, ketchup, honey, hot sauce, and Worcestershire sauce together. Mix well to even consistency.
