Stage 4: Solid Food

This refreshing salad is very popular in Thailand and eaten with shrimp and peanut sprinkles.
1 tbsp of lime juice
1 tbsp of brown or palm sugar
1 tbsp of fish sauce
2 tsp of dried shrimp, chopped
1 clove of garlic, minced
3 green beans, cooked (boiled in hot water for about 5 minutes) and thick sliced
8 oz of green papaya, peeled, halved seeded, thinly sliced or coarsely shredded
3 cherry tomatoes, halved
¼ cup of cilantro, chopped
2 stalks of scallions, thinly sliced
pinch of chili flakes
1 tbsp of roasted peanuts, coarsely chopped
1Combine lime, sugar, fish sauce, garlic, chili flakes and dried shrimp. Whisk together. Set dressing aside.
2In a bowl, mix shredded / julienne green papaya, cooked green beans, scallions, and cilantro.
3Pour the dressing over the salad. Sprinkle salted peanuts over the top of the salad.
