A refreshing summer salad, perfect for all occasions. To make cucumber noodles, you may need a vegetable spiralizer. You can use a mandolin, but it will create “straight” cucumber slices whereas spiralizer will create curly cucumber “noodles”.

Ingredients
2 English cucumber, rinsed
1 handful of cherry tomatoes, halved
2 oz. of low-fat feta cheese, crumbled
¼ cup of Kalamata olives (optional)
dressings
1 tbsp. of wine or balsamic vinegar
1 tbsp. of virgin olive oil
2 tbsp. of lemon juice
½ tsp. of dried oregano
1 garlic clove, minced
pinch of salt and pepper
Directions
1Make the cucumber noodles with vegetable spiralizer.
2In a small bowl, whisk all dressings’ ingredients together with a fork.
3In a medium bowl, Toss cucumber noodles and the remaining ingredients with dressings. Mix well.
