Stage 4: Solid Food

A lower calorie version of regular flour pancakes. You may omit baking powder, but the results will be similar to banana omelets. Serve with fresh berries, if desired.
2 large eggs
2 ripe bananas, mashed
½ tsp. of cinnamon (optional)
1 tsp. of vanilla extract (optional)
1/8 tsp. of baking powder
Pinch of kosher salt
1 tbsp. of olive oil
cooking spray to coat the skillet
1Combine all ingredients in a bowl.
2Lightly coat the non-stick skillet with cooking spray.
3Pour 2 tablespoons of batter into the skillet. Cook over medium-low heat until small bubbles are formed.
4Flip the pancake. It may take about 2 minutes to cook on each side.
