Ingredients
¾ cup of flour
½ tsp. of baking soda
¼ tsp. of kosher salt
1 tbsp. of stevia (optional)
2 eggs
¾ cup of low-fat cottage cheese
½ cup of nonfat milk
cooking spray to coat the skillet
Directions
In a large bowl, whisk all ingredients together.
Lightly coat a skillet or griddle with cooking spray.
Place about 2 tablespoons of the batter into the skillet.
Cook the pancakes over medium heat for 2-3 minutes on each side or until golden brown and cooked in the center.
