Appetizing sandwich made with simple ingredients. You can use leftover chicken from previous meal or store-bought rotisserie chicken. Chicken breast can be substituted with turkey or tuna.

Ingredients
½ cup chopped or shredded cooked chicken breast
1 tbsp. of low-fat mayonnaise
1/8 tsp. of salt
1/8 tsp. of ground pepper
1/16 tsp. of ground smoked paprika
½ medium cucumber, thinly sliced
2 slices of whole wheat bread
Directions
In a medium bowl, combine all listed ingredients except bread and cucumber slices.
Spread the chicken mixture onto a slice of bread, add cucumber slices, and cover with the remaining bread.
Cut sandwich in half.
