Stage 3: Soft Food

Simple oven baked style frittata. For a lower calorie version, you can remove some of the egg yolk from the mixture.
1 tbsp of olive oil
½ cup of low fat cheese
3 tbsp of diced onion
1/4 cup of cooked chicken sausage
¼ cup of chopped mushroom
Salt and Pepper to taste
1Preheat the oven to 350 F.
2In an oven safe saucepan, sauté onions and mushrooms with olive oil until soft.
3In the meantime, whisk the eggs and add cheese to the mixture. Season with a dash of salt and pepper.
4Incorporate the mixture with the cooked chicken sausage into the saucepan. Let it cook for few minutes.
5Pour the eggs and cheese mixture into the saucepan to cover the rest of the ingredients.
6Under medium heat, let the eggs cook for 3-5 minutes before placing inside the oven.
7Place the frittata in the oven, bake for 10 minutes or until the eggs are fully cooked.
