Chicken breast meatloaf enriched with carrots and other healthy vegetables. This recipe makes 1 loaf. You can substitute chicken with turkey breast.
1Preheat the oven to 350 F. Spray the baking dish with oil to prevent sticking.
2Mix all the ingredients in a large bowl. Add a few tablespoons of chicken broth to make the meatloaf mixture moist but not watery.
3Transfer the meatloaf mixture to a baking dish. Cook for 40 minutes or until the loaf is fully cooked / inner temperature reach 165 F.
