Ingredients
1 lb of ground chicken breasts
¼ cup of onion, minced
½ cup of breadcrumbs or panko
1 egg
¼ cup of celery, minced
¼ cup of carrot, minced
2 cloves of garlic, minced
3 tbsp of parsley, chopped
½ tsp of salt
½ tsp of black pepper
Few tablespoons of chicken broth to keep the meatloaf moist
Directions
Preheat the oven to 350 F. Spray the baking dish with oil to prevent sticking.
Mix all the ingredients in a large bowl. Add a few tablespoons of chicken broth to make the meatloaf mixture moist but not watery.
Transfer the meatloaf mixture to a baking dish. Cook for 40 minutes or until the loaf is fully cooked / inner temperature reach 165 F.
