A combination of lean protein and low-carbs vegetables dish. Cook until tender.
1Over medium heat, put the oil into a saucepan, add garlic, carrots, celery, onions, bell pepper, and okra. Sauté until soft but not brown.
2Add Pork, cook for 3-5 minutes.
3Add the remaining ingredients and seasonings. Simmer for about 1 hour or until the gumbo thickens and the pork is tender.
