Ingredients
2 tbsp of olive oil
¾ cup of celery, chopped
2 medium onion, chopped
1 medium bell pepper, diced
2 medium carrots, Sliced
3 cloves of garlic, minced
6 pods of okra, sliced or halved
1 tbsp of parsley, chopped
1 can of tomatoes, chopped
1 small can of tomato paste
1 lb. of pork loin, cubed
¼ tsp of dried thyme
1 bay leaf
1 cup of water
1 tbsp of Cajun seasoning or to taste
Salt and pepper to taste
Directions
Over medium heat, put the oil into a saucepan, add garlic, carrots, celery, onions, bell pepper, and okra. Sauté until soft but not brown.
Add Pork, cook for 3-5 minutes.
Add the remaining ingredients and seasonings. Simmer for about 1 hour or until the gumbo thickens and the pork is tender.
