Stage 4: Solid Food

Marinated tomato salad that pairs well with grilled chicken, turkey, or fish. You can use cherry, grape, heirloom, or any mix varieties of tomatoes.
1 lb. of tomatoes (any varieties of tomatoes), sliced
¾ cup of small/baby part-skim or low-fat mozzarella cheese
2 tbsp. of olive oil
6 tbsp. of balsamic vinegar
½ tsp. of kosher salt
¼ tsp. of black pepper
1 clove of garlic, minced
2 tsp. of dried basil or a small bunch of freshly chopped basil leaves
½ cup of pitted olives
½ cup of pickled onion (optional)
1In a bowl, combine and toss all ingredients together.
2Cover the bowl with plastic wrap or transfer to an airtight container.
3Store and let the flavor infused together in a refrigerator for at least 2 hours.
