Baked-Falafel-bariatric recipe

Baked Falafel

This Middle Eastern staple is commonly deep-fried. However in this recipe, the falafel is baked to reduce the excess calories from deep frying.

Yields: 3-4 Servings

Ingredients

1 (15 oz.) can chickpeas, rinsed and drained ½ medium onion, chopped 2 cloves of garlic, minced 1 tbsp. of extra virgin olive oil 1 tsp. of ground coriander 1 tsp. of ground cumin ¼ cup of freshly chopped cilantro ¼ cup of freshly chopped parsley 1 tsp. of baking powder 1 tbsp. of flour 1 tbsp. of lemon juice ½ tsp. of salt ¼ tsp. of pepper

Directions

Preheat oven to 375 F. Lightly coat a large baking sheet with olive oil or line baking sheet with parchment paper. Combine all the ingredients in a food processor. Pulse until the ingredients are mixed. Adjust the seasoning to your liking. Make sure to mix the mixture evenly. With a spoon, scoop up a spoonful of the falafel mixture and shape it into a mini burger shape, gently flattened the top. Bake the falafel for about 15 minutes on each side (for a total of 30 minutes) or until fully cooked in the center and golden brown on both sides.
