Beet Sorbet

This recipe is utilizing an ice cream maker. Be sure to follow the manufacturer’s guide to making sorbet. You may try to make this recipe without the ice cream machine, but the texture will be different.

  • Cook: 45 mins
  • Yields: 6 Servings


2 large beets, trimmed and brushed

3 tbsp. of stevia

¼ cup of apple cider or apple juice

¼ cup of orange juice

¼ cup of water

1 tbsp. of lemon juice

pinch of salt


1Pour just enough water into the cooking pot to submerge the beets. Boil beets for 45 minutes.

2Peel beets skin under cold running water.

3Roughly chop the beets. Set aside.

4In a blender, combine chopped beets, stevia, apple cider/juice, orange juice, lemon juice, and salt together. Blend until smooth.

5Transfer the beets mixture into a jar and refrigerate until cold for at least 4 hours.

6Prepare and process the chilled beets mixture in an ice cream maker - and follow the manufacturer’s instruction. Store beet sorbet in the freezer for few hours for a firmer sorbet.
