Pour just enough water into the cooking pot to submerge the beets. Boil beets for 45 minutes.
Peel beets skin under cold running water.
Roughly chop the beets. Set aside.
In a blender, combine chopped beets, stevia, apple cider/juice, orange juice, lemon juice, and salt together. Blend until smooth.
Transfer the beets mixture into a jar and refrigerate until cold for at least 4 hours.
Prepare and process the chilled beets mixture in an ice cream maker - and follow the manufacturer’s instruction. Store beet sorbet in the freezer for few hours for a firmer sorbet.
