A quick and easy, healthy salad that is ready within minutes. You can shred, finely slice or julienne the vegetables. This side dish pairs well with grilled chicken or fish.

  • Yields: 4 servings

Ingredients

1 medium carrot, peeled and shredded or julienned

5 medium radishes, thinly sliced

2 tsp. of olive oil

ΒΌ tsp. of lime or lemon zest

1 tbsp. of lime or lemon juice

Pinch of salt and pepper

1 tsp. black sesame

Directions

1In a medium bowl, mix all ingredients together.
