Stage 4: Solid Food

Refreshing and tangy cucumber salad that pairs well with fish, lamb, or poultry. Add a few tablespoons of nonfat yogurt for a creamier salad/side dish.
½ cup of low-fat cottage cheese
1 medium cucumber, diced
1 tbsp. of freshly chopped dill leaves
¼ tsp. of salt
1/8 tsp. of ground black pepper
1 tsp. of lemon juice
½ tsp. of freshly chopped mint leaves (optional)
1Combine and mix all ingredients together.
